Many of long-established restaurants here offer unusual delicacies such as:

Chicken feet, known more elegantly as "Phoenix claws".


Shredded pig ears, with their distinct "crunch-and-snap" texture.

 

Pidang, also known as the "thousand-year egg”


Tripe soup, honeycombed and spongy or slippery and chewy.


Duck tongues, with intense flavours, braised or tossed.
